                          New Potatoes-Country

  2 1/2  Lb.           small new potatoes -- (2 1/2 to 3)
    1/2  C.            butter
  3      Tbsp.         flour
  1      Tsp.          salt
    1/4  Tsp.          pepper
  2      C.            water
    1/2  Lb.           sliced bacon
  1      Tbsp.         lemon juice
                       snipped fresh dill -- chives or parsley

Cook potatoes with skins on. Over low heat melt butter.
Stir in flour, salt, pepper, slowly stirring in water. Add
lemon juice and cook until thickened. In large skillet, saute
bacon until crisp but not brittle; drain. When potatoes are
tender, drain and put into casserole. Pour butter sauce over
them. Bake 20 minutes. Top with crumbled bacon and generously
sprinkle with chives and parsley.
