3 lb Potatoes
1 1/2 c Buttermilk
1/4 c Butter
1 ts Salt
1/2 ts Black pepper
Peel 3 lb potatoes and cut into cubes 1/2" square. Place in a 4 qt
sauce pan with enough water to cover and bring to a boil. Lower
heat and simmer for about 15 minutes or until potatoes are tender.
Drain water from potatoes and and place them in a large bowl. Add
buttermilk, salt, pepper, and butter. Beat with an electric mixer
on medium speed until smooth and creamy. Place in serving dish and
dot with butter.
