    title: potato-chive fritters

    12 lb potato
     2 c  sour cream
   3/4 c  parsley
     1 t  garlic
     6 ea egg
   1/3 c  chives
     9 t  rendered bacon fat
     1 t  dry mustard
     1 t  ground thyme
   1/4 t  salt
   1/4 t  white pepper
   1/8 t  cayenne
          flour
          peanut oil

combine potatoes, sour cream, parsley, garlic, eggs, chives, bacon fat,
dry mustard, and thyme-
mix well
season to taste with salt, pepper, and cayenne
form into 1-inch diameter balls
dredge in flour
heat oil to 375 degrees
add balls in small batches and fry for 1 minute, until golden drain well
on a cooling rack and blot
with paper towels
transfer to a hotel pan, keep warm in a slow oven
repeat with remaining balls
serve hot
