    title: potato and onion gratin

     1 c  olive oil
   3/4 c  rendered bacon fat
     4 qt sweet red onion
     2 t  garlic
   1/4 c  fresh thyme leaves
   3/4 c  scallion greens
    12 lb new potatoes
   1/4 t  salt
   1/4 t  black pepper
   3/4 c  unsalted butter
     6 c  fresh breadcrumbs

heat olive oil and bacon fat in a saucepot, over a low flame add onions,
garlic, thyme, and
scallions
cover and heat for 10 minutes
remove from heat, set aside
arrange a layer of sliced potatoes in the bottom of a buttered baking pan
or casserole
season lightly with salt and pepper
spread a thin layer of the onion mixture on top of the potatoes
continue to build layers, finishing with a layer of potatoes combine
butter and breadcrumbs-mix
well
spread on top of potatoes
bake @ 425 degrees until well browned on top
serve hot
