                           Scalloped Potatoes

  6      md            Potatoes
  2      tb            Flour
  6      tb            Butter
  1      ts            Salt
  1      pt            Milk -- hot
  2      tb            Parsley -- chopped

Wash the potatoes, cook in boiling salted water until half done,
skin, and slice or cut in cubes. Grease a shallow baking dish, place
in it a layer of potatoes, sprinkle with some of the flour, salt, and
dot with fat. Continue until all the potatoes are used. Pour in the
hot milk, cover, and bake in a slow oven for 1 hour, or until the
potatoes are brown on top and soft throughout. If they become dry add
more milk. Serve the potatoes in the baking dish, and just before it
is sent to the table sprinkle the chopped parsley over the top.
