1 1/2 c Milk
2 tb Flour
2 tb Butter or other fat
1 ts Salt
1/4 lb Cheese -- grated
4 c Potatoes -- cooked, diced
1 c Buttered bread crumbs
Prepare a sauce with the milk, flour, fat, and salt. Add the cheese,
and stir until melted. In a shallow greased baking dish place the
potatoes, pour the cheese sauce over them, and cover the top with the
buttered bread crumbs. Bake in a moderate oven for 20 to 30 minutes,
or until the crumbs are golden brown and the potatoes are thoroughly
heated. Serve from the baking dish.
