                             Basil Mashed Potatoes

  2 1/2  lb            Baking potatoes -- peeled, cubed
    3/4  c             Heavy cream
    1/4  c             Unsalted butter
      2  tb            Lemon juice
    1/2  c             Basil leaves -- chopped
      1  tb            Ginger -- grated
      1  tb            Garlic -- minced
                       Salt

In a large saucepan of salted water bring potatoes to a boil. Simmer
about 20 minutes or until tender. Drain. Pass potatoes through a
ricer into a mixing bowl. Meanwhile, in a small saucepan combine
cream and butter. Bring to a boil and keep hot until potatoes are
cooked. With a mixer or electric beater whip potatoes on slow speed,
slowly drizzling in cream mixture. Do not overmix. Fold in lemon
juice, basil, ginger, and garlic. Season with salt.
