1 c Water
1 tb Sugar
3 Sprigs fresh mint; plus
-additional for garnish
1/2 ts Salt
2 tb Lemon juice
20 oz Frozen peas
3 tb Butter
1 pn Black pepper
In a large saucepan combine water, sugar, mint, salt and lemon
juice. Bring to a boil. Add frozen peas. When water returns to a
boil, cook until peas are heated through, about 1-2 minutes. Drain
the peas. Toss them with butter and pepper; serve with more fresh
mint leaves for garnish.
