2 qt Okra
4 tb Fat
Salt -- to taste
Select young okra, wash it well, dry thoroughly, and cut crosswise in
pieces about 1/2" thick. Heat the fat in a heavy skillet, add the
okra, cover, cook for 10 minutes, and stir frequently to prevent
burning. Remove the cover, continue to cook until the okra is tender
and lightly brown, and serve at once.
