Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 lb Green beans -- ends snipped and
-- cut into 1" pieces
3 tb Unsalted butter
1 ts Lemon zest -- freshly grated
1 tb Fresh rosemary -- minced -OR-
1 ts Dried rosemary -- crumbled
In a large kettle of boiling salted water cook the beans for
5 minutes, or until they are crisp-tender, and drain. While the
beans are cooking, in a small saucepan melt the butter over low heat
with the zest, rosemary, and salt and pepper to taste. Keep the
mixture warm. Transfer the beans to a serving dish and pour the
butter mixture over the beans. Toss well and serve warm.
Notes: You can serve this vegetable side dish with your Contemporary
or Dixie (Southern Style) Thanksgiving Day Dinner Menus from
Recipe-a-Day.com. The fresh rosemary really adds a savory flavor to
the green beans, so it's worth it to find the fresh herb.
If you can't find fresh green beans in your local at this time of the
year, you can substitute 16 oz frozen green beans that are already
trimmed. Just vary the cooking time and serve as directed.
