1 lg Eggplant
4 tb Soy sauce
1 tb Corn starch
3 tb Dry sherry
3 tb Sugar
1/4 c White vinegar
1/4 c Water
1 ts Red pepper
6 sl Fresh ginger root
4 Scallion -- chopped, separated
Cut eggplant into small cubes.
Combine soy sauce, sugar, vinegar, and water.
Heat 1 tb sherry, add red peppers, and stir. Add ginger, white part
of scallion, and stir briefly until ginger becomes fragrant. Add
eggplant and cook 8 to 10 minutes, stirring occassionally (until
eggplant is thoroughly cooked.)
Add soy sauce mixture and cook over high heat until most of the
liquid is evaporated, about 5 minutes.
Combine 2 tb sherry with corn starch. Add green part of scallion and
sherry/corn starch mix and cook until thick.
