                         Ginger-Orange Carrots

  1 1/4  lb            Carrots -- peeled, cut diag
  1      ts            Orange zest -- freshly grated
    1/4  c             Fresh orange juice
  2      ts            Butter
  2      ts            Honey
  1      ts            Fresh ginger -- grated
    1/4  ts            Salt

Place carrots in a large skillet, cover with water and bring to boil.
Reduce heat, cover, and simmer until crisp-tender, about 3 minutes.
Pour off water leaving carrots in pan.

Add remaining ingredients and stir over medium-high heat until
carrots are glazed, 1 to 2 minutes.
