Title: Red Cabbage & Apple

1 pn Cloves; freshly ground
1 pn Nutmeg; freshly ground
1/4 ts Thyme
1/2 ts Cinnamon
1 tb Oil; for sauteing
1 lg Red cabbage (2 lb);
- chopped small
3 Tart baking apples;
- chopped small
1 Lemon; juice and zest of
Saute the spices in a saucepan for a minute in the oil, then add the
red cabbage, apples, lemon juice, and zest with a small amount of
water. Simmer gently for 30 minutes, stirring often. Just before
serving, it's nice to stir in a little thick cream.
