Parboil asparagus 4 minutes; drain. Mix together on a
plate cheese and bread crumbs. In shallow bowl place beaten
eggs. Dip asparagus in egg and then bread crumbs, coating
well. Chill 20 minutes. In skillet heat the oil and butter.
Saute asparagus a few stalks at a time; add more butter and
oil, if necessary. Place asparagus on heated platter; sprinkle
with more Parmesan cheese and run under the broiler. Serves 6.
