Title: Veggie Stuffed Green Peppers (Shawn's)

Yield: 4 Servings
1/4 c Rice
1 Onion, chopped
1 cn Refried beans
1 tb Garlic, minced
6 Mushrooms, chopped
Olive oil, as needed
Salt, pepper, any other
-spices you like
[Note: For a meat free dish we loved it.]
Remove the tops of the green peppers and discard the seeds. Chop the
top part small.
Boil a pot of water and submerge the green peppers. Blanche them for
about a minute or so.
Heat the oil in a frying pan, fry the onion, mushroom, and tops of
green peppers until done.
Add the can of beans and the spices. Cook until warmed through.
Fill the peppers with the mixture and top with a bit of cheddar
cheese. Bake at 350 F until cheese is melted and peppers are
cooked.
