                               Stuffed Tomatoes

      4                tomatoes
      3  cups          couscous, -- cooked
      3                carrots, -- diced
      1  cup           small peas
      2                zucchini, -- diced
    1/2  cup           orange juice
    1/4  cup           mint, -- chopped
                       Salt Pepper


Preheat oven to 350 degrees. Carefully remove top quarter of tomatoes and
scoop out inside pulp. Be careful not to break the walls. In small bowl
combine remaining ingredients. Fill the shells with mixture. Bake for 30
minutes.
