    Title: Spinach Salad

 Servings: 4

     6 c  Fresh spinach; torn
     1 sm Red onion; sliced,
          - separated into rings
     2 tb Orange juice
     1 tb Honey
     1 ts Prepared mustard
     2 md Oranges; peeled, sectioned
     4 oz Sliced water chestnuts
          - (1/2 can); drain
     1 tb Olive oil or cooking oil
     1 ts Toasted sesame seed

 * sliced and separated into rings

 Salad:

 In a large salad bowl place spinach, orange sections, onion slices,
 and water chestnuts (use half of 8 oz can). Sprinkle with 1/4 ts
 pepper.

 Dressing:

 In a screw-top jar combine orange juice, oil, honey, sesame seed,
 and mustard. Cover and shake well.

 Pour dressing over salad. Toss lightly to coat. Serve immediately.
