MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Cucumber Pepper Slaw
Categories: Squash, Chilies, Vegetables, Cheese, Herbs
     Yield: 4 servings

     1 lg Cucumber; split lengthwise,
          - seeded, thin sliced across
     1 tb Kosher salt
   1/3 c  Olive oil
   1/4 c  Rice vinegar
   1/2 ts Sugar
          Fresh ground black pepper
     1    Habanero chile; seeded, thin
          - sliced
     1    Jalape+Xo chile; seeded, thin
          - sliced
     1    Red bell pepper; seeded,
          - thin sliced
     1 sm Red onion; thin sliced
     3 oz Feta, in 1/2" pieces
   1/3 c  Coarse chopped basil

 Toss cucumber and salt in a colander set in the sink;
 let drain for 15 minutes. Spread the cucumber onto paper
 towels and pat dry.

 In a large bowl, whisk together the oil, vinegar, sugar,
 and black pepper. Add the cucumbers, chiles, bell
 pepper, onion, feta (if using), and the basil, and toss
 to coat. Set aside for 30 minutes before serving at room
 temperature.
