     Title: Cobb Salad

     Yield: 4 Servings

   1/4 c  Red wine vinegar
     2 ts Salt
     1 ts Lemon juice
     1 cl Garlic; minced
   3/4 ts Pepper; coarse ground
   3/4 ts Worcestershire sauce
   1/4 ts Sugar
   1/4 ts Ground mustard
   3/4 c  Canola oil
   1/4 c  Olive oil

 6 1/2 c  Torn romaine
 2 1/2 c  Torn curly endive
     4 oz Bunch watercress;
          - trimmed, divided
     2 c  Chicken breast;
          - cooked, diced
     2 md Tomatoes; seeded, chopped
     1 md Ripe avocado;
          - pitted, peeled, chopped
     3 lg Eggs; hard-boiled, chopped
   1/2 c  Blue or Roquefort cheese;
          - crumbled
     6 sl Bacon; cooked, crumbled
     2 tb Fresh chives; minced

 In a blender, combine the first 8 ingredients. While processing,
 gradually add canola and olive oils in a steady stream.

 In a large bowl, combine the romaine, endive, and half of the
 watercress; toss lightly. Transfer to a serving platter. Arrange
 the chicken, tomatoes, avocado, eggs, cheese, and bacon over the
 greens; sprinkle with chives. Top with remaining watercress. Cover
 and chill until serving.

 To serve, drizzle 1 cup dressing over salad. Serve with remaining
 dressing if desired.
