2 Very fresh beets with leaves
1 c Fresh parsley; chopped
MMMMM--------------------------DRESSING-------------------------------
2 tb Mayonnaise
2 tb Sour cream
1 tb Thyme-tarragon herbed
- vinegar
1/2 ts Capers
Salt; to taste
Black pepper;
- freshly ground,
- to taste
Cut the leaves and stem from the beets. Save the freshest green
leaves. Scrub the beets but do not peel them. Grate the flesh and
combine it with the shredded green leaves and parsley. Stir the
dressing into the salad.
