     Title: Popeye's Muscle Builder Salad
Categories: Salads, Dressings, Greens, Squash
     Yield: 4 Servings

     3 tb Extra-virgin olive oil
 1 1/2 tb Red-wine vinegar -OR-
 1 1/2 tb Lemon juice
     6    Pitted Kalamata olives; fine
          - chopped
   1/4 ts Salt
          Fresh ground pepper
     6 c  Spinach leaves; torn
   1/2 lg Cucumber; seeded, sliced
   1/2 md Red onion; thin sliced

 Whisk oil, vinegar (or lemon juice) & olives in a salad
 bowl. Season with salt & pepper. Add spinach, cucumbers
 and onions; toss well. Serve immediately.
