Green Papaya Salad (Pham)

3 Fresh thai bird chilies -- or more to taste
- OR any red chilies -- thinly sliced
1 cl Garlic -- thinly sliced
1 Shallot -- thinly sliced
3 Fried shrimp -- soaked in warm
- water for five minutes
- and rinsed (optional)
2 ts Brown sugar
1/2 ts Salt
1 tb Fish sauce
4 tb Fresh lime juice
1 sm Unripe green papaya -- peeled,
- julienned, rinsed, and
- patted dry with paper towels
- (about 2 to 3 cups)
1 lg Carrot -- peeled and
- finely shredded, soaked in
- ice water for ten minutes,
- drained
8 Cherry tomatoes -- cut in half
1 sm Red leaf lettuce head -- leaves separated
- and washed
2 tb Roasted peanuts -- chopped, for garnish
Combine the chilies, garlic, shallot, shrimp, and sugar in a mortar
and pound into a paste. Transfer to a mixing bowl and add the salt,
fish sauce and lime juice and blend well.
Add the papaya to the mortar. Using a spoon continuously turn the
papaya, gently pound it so the fruit bruises slightly, about
1 minute. You may have to work in several small batches. Add the
papaya to the spice mixture.
Add the carrot and tomatoes and toss. Transfer to a serving plate
lined with lettuce leaves and garnish with peanuts.

Notes: When papaya is not available, cabbage can be used as a substitute
