               Star Anise Vegetable Salad (Morocco) BBC*

  2      large         carrots
  2                    zucchini
  4                    star anise
  3      tablespoons   white wine vinegar
                       ---DRESSING---
  1      tablespoon    extra virgin olive oil
  2      tablespoons   fresh lemon juice
  1      tablespoon    chopped fresh flat-leaf parsley
  1      tablespoon    chopped fresh cilantro
                       salt and black pepper
                       unchopped parsley leaves -- for garnish

Steam chunks of carrot and courgette (zucchini) until tender. Drain and add
a few star anise and a drizzle of white wine vinegar. Allow to cool. Toss
with olive oil, lemon juice, chopped fresh flat-leaf parsley and cilantro
and seasoning. Quantities were not specified in the article. The amounts
listed here are guidelines.

VARIATION. Steam broccoli spears and carrots with a star anise. Serve as a
warm vegetable side dish or toss with the above dressing, adding white wine
vinegar to taste.

NOTES : Moroccans serve small vegetable dishes at the beginning of a meal to
stimulate the appetite. This use of star anise was unusual; we enjoyed it.
Turn the salad into a meal: add nuts and serve with a crusty bread. Serves
