                         Japanese Chicken Salad

  8      oz            Chicken breast -- cooked and
                       - shredded
  2      oz            Sai fun bean thread noodles --
                       - deep fried
  1                    Lettuce head -- shredded
  4                    Green onions -- sliced thin
  2      tb            Almonds -- toasted and chopped
  2      tb            Sesame seeds -- toasted
                       Dressing:
  4      tb            Sugar
  2      ts            Salt
    1/4  ts            Pepper
  2      tb            Canola oil
  6      tb            Rice vinegar

Cook chicken meat and shred into thin strips by hand.

Fry sai fun noodles in 4 cups hot oil until they expand. Remove from
oil immediately.

Shred lettuce and onions. Toast almonds and sesame seeds.

Prepare dressing and mix together.

Notes:

The noodles can be fried days ahead and stored in an airtight
container. Shrimp, crab, or turkey may be substituted for chicken.
