Dressing:
3 tb Red wine vinegar
1 cl Garlic -- minced
1 ts Dried basil
1/2 ts Salt
1/4 ts Sugar
Freshly ground pepper
4 ts Olive oil
Salad:
2 c Cooked bowtie or spiral pasta --
- drained
1/2 c Tuna -- water packed, drained,
- flaked
2 oz Low-fat jack or cheddar --
- cubed 1/4"
1 c Cherry tomatoes -- halved
1/4 c Red onion -- thinly sliced
1/4 c Celery -- thinly sliced
3/4 c Broccoli flowerettes -- steamed
1/2 c Artichoke hearts -- sliced,
- canned or thawed
1/4 c Parsley -- chopped
Belgian endive
Dressing:
In small container with tightly fitting lid, combine dressing
ingredients.
Cover tightly and shake thoroughly to mix.
Salad:
In large bowl combine salad ingredients, except endive.
Pour dressing over all and toss to mix.
Chill at least 1 hour.
To Serve:
Arrange salad in serving bowl lined with endive spears.
