1/2 c Lemon juice
1 1/2 ts Salt
1 1/2 ts Onion powder
1 ts Dill weed
1/4 ts Ground black pepper
4 c Zucchini (3 md) -- sliced
1 1/4 c Carrots (2 md) -- shredded
1/2 c Ripe olives -- sliced
1/3 c Pimiento -- chopped
In a small covered jar, combine oil, lemon juice, salt, onion powder,
dill weed, and black pepper. Cover and shake well. In a large bowl,
combine zucchini, carrots, olives, and pimiento; toss gently. Pour
about 1/4 cup dressing for future use.
