2 c pasta -- small:orzo,shells

: Salt
1/3 c olive oil -- light
2 TB red wine vinegar
1/2 c fresh mint leaves --
: chopped
1 ts fresh oregano -- chopped
2 cloves garlic -- minced
: Freshly ground pepper to
: taste
1. Cook pasta in boiling salted water according to
package directions until al dente; drain well. 2. Mix
oil, vinegar, herbs, garlic, salt and pepper in a
serving bowl. Add pasta and toss gently. Serve warm or
at room temperature.
