  1      Teaspoon      salt
  1      Teaspoon      sugar
    1/2  Cup           shrimps -- boiled, shredded
    1/2  Cup           chicken breast -- boiled, shredded
  2      Tablespoons   lime juice
  2      Tablespoons   garlic sliced -- crisp-fried
  2      Tablespoons   shallots -- crisp-fried
  2      Tablespoons   peanuts -- crisp-fried
    1/2  Cup           grapes, green and red -- halved
    1/2  Cup           orange -- lightly shredded
    1/2  Cup           apple -- diced
    1/2  Cup           water chestnuts or jicama -- sliced
    1/2  Cup           strawberries -- halved
    1/2  Cup           rambutans or lychees -- sliced
                       Shredded red chilis -- for garnish
                       coriander leaves -- for garnish

Dissolve sugar and salt in lime juice, then add chicken and shrimp and turn
well. Save half portions of garlic, shallots, peanuts, chilis and coriander
for last minute decoration. Add the remaining quantities in the mixing.
Turn well. Add all other ingredients and turn very lightly, not to damage
the fruit texture. Use the rest of garlic, shallots, peanuts, chilis and
coriander to sprinkle on top before serving. Use dug out oranges as
containers.
