2 lb Chicken breasts -- boneless,
- skinless, cooked
1 c Mayonnaise
2 tb Peach juice
1/2 c Heavy cream -- whipped
Salt
White pepper
2 c Peaches -- canned, drained,
- diced
Cut cooked chicken breast meat into 1/2" cubes and set aside. Blend
mayonnaise and peach juice in a 2 qt mixing bowl and fold in whipped
cream. Season with salt and pepper as needed. Add cubed chicken meat
and diced peaches and mix lightly, coating chicken. Stir gently until
blended. Refrigerate 1 hour. Can serve with lettuce instead of bread.
