MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Southwestern Rice

     Yield: 8 servings

     1 tb Olive oil
     1 md Bell pepper; diced
     1 md Onion; chopped
     2 cl Garlic; minced
     1 c  Uncooked long grain rice
   1/2 ts Ground cumin
   1/8 ts Ground turmeric
14 1/2 oz Can chicken broth
    10 oz Corn niblets; thawed
    15 oz Can black beans; rinsed,
          - drained
    10 oz Can Ro*Tel diced tomatoes
          - with green chiles;
          - undrained

 In a large nonstick skillet, heat oil over medium-high heat; saute
 pepper and onion 3 minutes. Add garlic; cook and stir 1 minute.

 Stir in rice, spices and broth; bring to a boil. Reduce heat;
 simmer, covered, until rice is tender, about 15 minutes. Stir in
 remaining ingredients; cook, covered, until heated through.
