1 1/2 c Onion; chopped
2 c Green pepper; chopped
1 c Canned garbanzo beans
16 oz Can tomato paste
1 3/4 c Dry brown rice
1/4 c Oil
1 c Cheese; grated
2 Tomatoes; chopped
1/2 ts Salt
1 ts Oregano
1 ts Basil
2 ts Garlic powder
Saute in a large pot--onions, garlic, spices, and pepper in oil. Add
dry rice, tomato paste, and 3 cups water, bring to a boil then simmer
20 minutes. Add tomatoes and beans (and more water if necessary).
Simmer for 10 minutes. Stir mixture and serve topped with grated
cheese.
