1 ts Chili powder
1 ts Cajun spice mix -- see

1/4 c Fresh cilantro -- chopped
2 ds Tabasco sauce
4 c Brown rice -- cooked

Homemade Cajun Spice Mix:
3 tb Paprika
2 ts Onion powder
2 ts Ground black pepper
2 ts Ground white pepper
2 ts Cayenne
1 ts Ground dried oregano
1 ts Ground dried thyme
1/2 ts Celery seed
Preparation Time: 25 minutes
Saute the onion, green pepper, scallions, garlic, and mushrooms in
a small amount of water for 5 to 10 minutes. Add the remaining
ingredients (except for the rice) and mix well. Stir in the cooked
rice, heat through, and serve.
Note: Some Commerical Cajun spice mixes are now available. To make
your own Cajun spice mix, combine the ingredients, mix together,
and store in a tightly covered container.
Makes about 1/3 cup.

Notes: I added 1 cooked link of turkey kielbasa, sliced and 1 cup
precooked, frozen shrimp. Tasted just like jambalaya! Also used
Lusianne's Cajun Spice.
