2 Eggs; separated
1 tb Powdered sugar
2 c Milk
3/4 c Raisins
1 1/4 c Cooked rice
1/2 c Brown sugar
1/2 t Cinnamon
1/4 t Nutmeg
1/4 t Ginger powder
1/4 t Salt
Beat egg whites with powdered sugar. Set aside.
Mix egg yolks with 2 tb of the milk. Set aside.
Cook the rest of the milk and the raisins in a double boiler for
15 minutes. Add rice. Cook 5 minutes. Add all ingredients except
the egg whites. Cook for 3 minutes, stirring constantly. Pour into
an ovenproof dish. Top with egg whites and broil until delicately
browned. Chill and serve.
