1 sm Onion; diced small
1 Garlic; minced fine
2 ts Oil
1 ts Good quality Madras curry
Powder
1/2 c Peas
1/8 c Carrot; shaved (optional)
1 lg Egg
1/4 ts Orange peel; minced
1/4 ts Lemon peel; minced

2 c Cooked rice; cooked firm and
-then cooled
Cook the onion and garlic in oil until wilted and translucent.
Add curry powder and cook briefly. Add peas and carrot and cook
briefly.
Beat the egg with the peels and season to taste. Set aside.
Turn the rice into the onion-pea mixture. Heat through and then
stir in the egg. Cover and remove from heat.
This is not as savory as real fried rice, but it is tons healthier.
