Title: Sfi Creamy Cauliflower And Leek Risotto

1 tb Butter/oil
300 g Cauliflower florets
1/2 Red capsicum; diced
1 Leek; sliced
1 1/2 c Arborio rice
1 pk Produce Partners Creamy
- Cauliflower
- Supreme Mix
2 c Milk
1 c Chicken stock
Parmesan cheese; grated
1 tb McCormick Parsley Flakes
Heat butter in a large shallow saucepan and saute cauliflower,
capsicum and leek 2 to 3 minutes. Add rice and stir fry 2
minutes.
Add packet contents, gradually add milk and chicken stock,
stirring well after each addition. Continue to stir and simmer 15
minutes.
Serve hot. Garnish with parmesan cheese and parsley flakes.
