MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Risotto w/White Truffles
Categories: Rice, Mushrooms, Cheese
     Yield: 4 Servings

   320 g  Arborio rice
     2    White truffles
  1250 cc Meat stock
    60 g  Grated Parmesan cheese
    40 g  Butter
          Salt

 Set aside a knob of butter and melt the remainder in a large
 saucepan. Add the rice and toast it for a few seconds,
 stirring constantly. Add the hot stock one ladleful at a
 time as the rice absorbs the liquid. Continue cooking until
 the rice is done but still firm. Salt to taste.

 Turn off the heat. Stir in the remaining butter and grated
 Parmesan cheese. Serve in heated bowls and garnish with the
 cleaned shaved truffle.
