                              Spanish Rice

    1/2  lb            Bacon
  3                    Onions -- sliced
  2                    Green peppers -- sliced
  3      c             Fresh or canned tomatoes
  2      c             Cooked rice
  1      ts            Salt
                       Pepper

Fry the bacon in a skillet until crisp, remove it from the fat, and
break it into small pieces. Cook the onions and green pepper in the
fat for 5 minutes, add the tomatoes and simmer for 10 minutes, stir
in the cooked rice carefully so as not to break the grains, add the
bits of bacon, and when heated through, serve at once.
