                             SPANISH RICE 3

    1/4  c             Butter or margarine
  2      c             Uncooked instant rice
 14 1/2  oz            Tomatoes with liquid -- cut up
  1      c             Boiling water
  2                    Beef bouillon cubes
  1      md            Onion -- chopped
  1      Cl            Garlic -- minced
  1                    Bay leaf
  1      t             Sugar
  1      t             Salt
    1/4  t             Pepper

 In a large skillet, brown the ground beef; drain. Stir
 in taco seasoning, kidney beans and salsa. Bring to a
 boil; reduce heat and simmer 5 minutes. peppers in
 half lengthwise; remove and discard seeds and stems.
 Immerse peppers in boiling water for 3 minutes; drain.
 Spoon about 1/2 cup meat mixture into each pepper
 half. Pla in an ungreased 13-inch x 9-inch x 2-inch
 baking dish. Cover and bake at 35 for 15-20 minutes or
 until peppers are crisp tende and filling is heated
 through. Top each with tomato, cheese and dollop of
 sour cream.
