Title: Yellow Rice and Smoked Sausage

Yield: 6 Servings
1 pk Smoked sausage, sliced
2 ts Olive oil divided
2 ea Red and green bell peppers
(cut into thin strips)
2 ea Garlic cloves, minced
2 md Onions, sliced
16 oz Jar chunky salsa
2 ts Italian seasoning
8 oz Pkg yellow rice, cooked
Heat 1 ts of oil in large non stick skillet over medium heat until
hot. Cook sausage 1 to 20 minutes per side or until lightly browned.
Remove from pan and keepwarm.
Add remaining oil with peppers, onion and garlic, cook stirring often
until veggies are tender about 10 minutes.
Stir in cooked sausage, salsa and italian spices. Bring to a boil
stirring constantly.
