1 Lb. small new potatoes -- unpeeled
2 Tbsp. water
1/8 Tsp. salt
3/4 C. Zesty Italian salad dressing
2 Tbsp. minced green onions
2 Tbsp. chopped fresh parsley
2 Tsp. chopped pimiento
Scrub new potatoes and cut into 1/4-inch thick. Place
in a 1 1/2 quart casserole; add water and salt. Cover and
microwave at High for 8 to 10 minutes or until potatoes are
almost done. Let stand 3 minutes. Drain carefully. Combine
salad dressing and remaining ingredients, stirring well. Pour
mixture over potatoes, tossing gently to coat thoroughly.
Cover and chill at least 3 hours.
Yield: 4 servings.
