2 lb Unpeeled red potatoes -- cooked
1/2 c Celery -- chopped
1/4 c Dill pickles -- chopped
2 tb Sweet red peppers -- chopped
2 tb Onion -- chopped
2 tb Fresh parsley -- snipped
1 1/2 ts Fresh mint -OR-
1/2 ts Dried mint
2 tb Plain low-fat yogurt
2 tb Lemon juice
1/2 ts Honey
1/4 ts Dry mustard
3/4 ts Fresh basil -OR-
1/4 ts Dried basil
1/4 ts Pepper
In bowl, combine potatoes, celery, pickle, red pepper, onion,
parsley, and mint. Combine all remaining ingredients; pour over salad
and mix gently. Cover and chill for several hours.
