                       Creamy Sweet Potato Salad

  2      c             Mayonnaise
    1/3  c             Buttermilk
  2      tb            Lemon juice
  1      tb            Dijon mustard
  1      ts            Sugar
  3      lb            Sweet potatoes --
                       - cooked, peeled, cubed
  1      c             Peas
    1/2  c             Sweet red or green pepper
    1/2  c             Green onions -- sliced
  1      bn            Fresh spinach
  3                    Bacon strips -- cooked, crumbled

In a bowl, blend mayonnaise, buttermilk, lemon juice, mustard, and
sugar until smooth.

In a large bowl, combine sweet potatoes, peas, pepper, and onions.

Pour dressing over all and toss to blend.

Chill at least 2 hours or overnight.

To Serve:

Spoon salad into a large brown lined with spice and and top with
bacon.
