                         Apricot Pine Nut Pilaf

  3      tablespoons   butter or margarine
    1/4  cup           pine nuts or blanched almonds -- slivered
  1      cup           rice -- uncooked
 14 1/2  ounce can     chicken broth
    1/2  cup           dried apricot halves -- chopped
    1/2  cup           green onions -- thinly sliced

Melt margarine in medium skillet over mediumhHigh heat. Add pine nuts. Cook
and stir for 2-3 minutes or until lightly browned. Remove nuts from skillet
sith slotted spoon. Set aside. Add rice. Cook and stir 3-5 minutes or until
rice is golden brown, stirring frequently. Stir in broth. Bring to a boil.
Reduce heat. Cover and simmer for 20 minutes or until rice is tender and
liquid is absorbed. Add nuts, apricots and onions. Cook, covered over low
heat for 5 minutes.
