MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Super Zucchini Chunk Pickles
Categories: Pickles
     Yield: 1 Batch

     6 lg Zucchini; up to 8
     6 c  Vinegar
    10 c  Sugar
     2 tb Pickling spices
     1 c  Hydrated lime
     1 ga Water

 In a 3 gallon glass, enamel, or plastic container, dissolve lime in a
 gallon of water. Add zucchini & soak for 24 hours. Pour off lime
 water & rinse squares very well in cold water, allowing water to run
 at least 10 minutes. When rinsed, allow to drain on absorbant
 material for 3 hours.

 In large stainless steel or enameled ketty, combine vinegar & sugar.
 Stir well & add pickling spices. Add zucchini & let stand for another
      24    hours.

 Now you are nearing perfection! Bring to full rolling boil & boil 35
 minutes. You may want to add green food coloring for brightly colored
 chunks. Pack into hot jars, seal & water bath 15 minutes.
