1/2 c Sugar
1/4 c Quick cooking tapioca
ds Salt
2 1/2 c Orange juice
1 c Orange sections
1/4 c Cut up dates
1/4 c Flaked coconut
Mix sugar, tapioca, salt and orange juice in 2 quart
saucepan. Let stand five minutes. Heat to boiling over
medium heat, stirring constantly. Cool slightly, stir in
orange sections and dates. Refrigerate at least one hour.
Spoon tapioca into dessert dishes; sprinkle with coconut.
