MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Black Bean & Corn Quinoa

     Yield: 4 servings

     2 tb Canola oil
     1 md Onion; fine chopped
     1 md Red bell pepper; fine
          - chopped
     1    Celery rib; fine chopped
     2 ts Chilli spice mix
   1/4 ts Salt
   1/4 ts Pepper
     2 c  Vegetable stock
     1 c  Frozen corn
     1 c  Quinoa; rinsed
    15 oz Can black beans; rinsed,
          - drained
   1/3 c  Fresh cilantro; +2 tb,
          - divided

 In a large skillet, heat oil over medium-high heat. Add onion, red
 pepper, celery, and seasonings; cook and stir 5-7 minutes or until
 vegetables are tender.

 Stir in stock and corn; bring to a boil. Stir in quinoa. Reduce
 heat; simmer, covered, 12-15 minutes or until liquid is absorbed.

 Add beans and 1/3 cup cilantro; heat through, stirring
 occasionally. Sprinkle with remaining cilantro.
