Title: Ragout of Broccolini, Beans and Sausage
Categories: Stews, Vegetables, Beans, Sausage, Clams
     Yield: 4 Servings

2 tb Olive oil; plus more for
          - drizzling
   1/2 c  Onion; chopped
6 oz Hot Italian sausage meat
15 1/2 oz Can cannelloni beans
     1 sm Broccolini bunch
     2 ts Garlic; chopped
1/4 ts Salt; plus more if needed
   1/8 ts Red pepper flakes
          Parmesan cheese (optional);
          - grated
     1 cn Clams

Pour the oil into large skillet or saucepan and add onion and
sausage. Cook over high heat for 2 to 3 minutes, breaking the
sausage meat into small pieces with a fork or spoon. Add the
liquid from the can of beans and bring to a boil.

Meanwhile, wash and cut the broccolini tops into 1/2" pieces. Add
to the  pan with garlic, salt and red pepper flakes and return to
a boil. Cover and boil gently for 4 to 5 minutes, or until the
broccolini is tender but still a little  crunchy.

Add the beans, mix well and return to a boil. Boil uncovered, for
2 to 3 minutes to blend the flavors. Taste and add more salt if
needed. Serve as is, or sprinkle with the Parmesan cheese and
 extra oil.

Recipe Notes: ON the show he added a can of clams. Actually he
added the clam juice to the saute pan when he added the broccolini
to help it cook then added the actual clams at the end of the
 cooking time.
