     Title: Butter Beans With Ham Hock

     Yield: 1 Batch

     1 lb Dry butter beans
     1    Ham hock

 Soak the beans overnight, then drain them in the morning.

 Put a smoked ham hock in the pot and nestle it down under the beans
 and cover them in water.

 Bring to a boil and then turn down to simmer for several hours.

 Should be ready by lunchtime.

 This was Carl Bushnell's favorite, served with cornbread and some
 pickled vegetables, followed up with molasses ginger cookies.
