Cooked rice
Cooked elbow macaroni
1 c Lentils
1 tb Oil
2 Fresh chili peppers
1 1/2 c Tomato sauce
2 tb Vinegar
1 lg Onion, chopped
Place lentils in a saucepan, cover by 1 inch with water. Bring to a
boil, reduce heat to a simmer, cover, and cook for 35 minutes. Drain
and set aside. Heat oil in skillet and saute peppers and onions until
onions begin to brown. Add tomato sauce and vinegar, bring to a boil,
and then reduce heat and simmer 5 minutes. Stir in lentils. Serve
lentil mixture over cooked rice and cooked elbow macaroni mixed
together.
