21 oz Can pork-and-beans
1 lg Onion -- finely chopped
12 oz Bottle ketchup
1 tb Yellow mustard
1 1/4 c Light brown sugar -- packed
1/4 c Molasses
1/2 c Sweet gherkin juice
1 ts Apple cider vinegar
Salt and ground pepper
1/2 lb Smoked bacon -- thickly sliced
Preheat oven to 350 F. In a 2 qt casserole dish combine all
ingredients except bacon; season to taste with salt and pepper.
Criss-cross top with bacon strips. Cover with aluminum foil.
Bake for 1 hour. Remove foil and continue to bake 30 minutes longer.
Serve hot or cold.
